This is my my very own, quick bake, microwaveable Red Velvet Cake with a cream cheese filling, blanketed in a white chocolate ganache, and topped with a healthy layer of rich butter cream icing to pretty it up for the one you love.


Red Velvet Cake

1) 3 tablespoons milk
2) 4 tablespoons all purpose flour
3) 1/2 teaspoon white vinegar
4) 2 tablespoons of sugar (a finer sugar like castor type is better)
5) 1 teaspoon cocoa powder
6) 1/4 teaspoon baking powder
7) just a pinch of salt
8) 1 & 1/2 tablespoons vegetable oil
9) 5 drops red food coloring

White Chocolate Ganache

1) 100 grams White Chocolate
2) 50 ml of heavy cream (1/4 cup)

Butter Cream Frosting

1) 1 cup powdered sugar
2) 115 grams of butter (a stick)
3) 1 teaspoon of Vanilla extract (or 1/2 tsp of vanilla paste if you have it)
4) 1 & 1/2 Tablespoons of Heavy Cream


Red Velvet Cake

In your ceramic bowl or mug, whisk (with a small whisk or large fork) together the milk and vinegar.

Next, In a small bowl, whisk together dry ingredients. Add to the dry mixture too your cream mixture and mix well. Then add the vegetable oil and red food coloring. Whisk until smooth.

Cook in the microwave on high for 1 minute and 10 seconds. It’s gonna puff up quick and deflate fast, no problem. Cool it down in the refrigerator while you prepare your toppings.

White Chocolate Ganache

Get the best white chocolate you can, chips work best, but if you have a bar, that’s cool too, just break it up into small chunks. Then mix your white chocolate and heavy cream together in a microwaveable bowl or mug. Put it in on High for 30 seconds, take it out for a quick stir, put it back in for 30 -45 seconds and stir again, repeat until its a nice thick smooth texture. Pour over the cake to form a nice creamy blanket.

Butter Cream Icing

Sift that powdered sugar well to ensure a nice smooth consistency. In your mixer, beat it together with your softened butter. Once well combined, add your cream and vanilla and beat it up some more until it’s light smooth, fluffy and yummy. Test often, because, well, it’s pretty yummy 🙂
