Opera is a really classy dish that is very luxurious.Today,I’m going to be showing you how to make the almond sponge,Swiss meringue buttercream,Chocolate ganache,Ganache glaze and Coffee syrup to brush on to the sponge.

Almond sponge (enough for 3 13” x 9” pan)
1 1/3 cup (160 g) ground almonds,fine
3/4 cup (96 g) cake and pastry flour
2 whole eggs
4 eggs, seperated
1/2 cup (100 g) + 1/4 cup (50 g) caster sugar
1 tsp (5 mL) vanilla extract

Ganache filling
16 oz (350 g) dark chocolate,chopped finely
2 cups (480 mL) heavy whipping cream (35,1% milk fat)

Swiss Meringue Buttercream
4 egg whites
1 1/4 cup (250 g) caster sugar
1 1/2 cup (340 g) unsalted butter,softened
1 tbsp (15 mL) vanilla extract

Coffee Syrup
1 cup (240 mL) hot water
2 tbsp (30 g) coffee granules
2 tbsp (23 g) caster sugar

Almond sponge
Sieve cake flour over ground almond flour and set aside.in a clean bowl,whip 4 egg whites and slowly adding 1/4 cup sugar until soft peaks form.In another bowl whip 2 eggs and 4 yolks together with 1/2 cup sugar and 1 tsp vanilla until quadruple in volume.Fold 1/2 egg white into yolk base then add the rest of egg white into the yolk.Add all of dry ingredients to mixture and then fold it until smooth and then divide batter into three 13” x 9” and bake each pan for 7 minutes at preheated 400 F(200 C) until golden brown.

Melt 16 oz chocolate and 1 cup of cream over a bain marie(double boiler) and then take it out of the heat abd stir in remaining 1 cup of cream and put it into the fridge for 1 hour and whip it a bit until spreadable consistency is obtained

Swiss Meringue Buttercream
Whisk egg whites and caster sugar until combined and place over simmering water and cook until (160 F) or until sugar is all melted and put the mixture into a mixing bowl and whip at HIGH SPEED (SPEED 10!!!!) until your mixture cools to room temperature.Once cooled,add butter tablespoon by tablespoon until all butter is added and you’ll obtained your buttercream.
(note:if your buttercream looks soupy or curdled,just continue mixing until you’ve obtained the buttercream consistensy)

Coffee syrup
Mix everything together 😄😄😄😄🤣🤣🤣😂😂😂😒.
