Hey Everyone! Thank you for stopping by! 🙂 In this video I show you how I make Oatmeal Fudge Squares. I love this recipe because it is so easy to make and so addicting! If you’re not really into oatmeal, then you can easily skip that part and go straight into making the chocolate peanut butter mixture. With that you can eat it plain, or drop in your favorite trail mix, before putting in the refrigerator to harden.
1/2 cup coconut oil
1/3 cup Agave sweetener
1/2 tsp. Vanilla Extract
2 1/3 cup Gluten free rolled oats (Bob’s Red mill)
1/3 cup ground flax seed
6 oz. vegan & Gluten free dark chocolate bar (or chocolate of your choice)
1/2 cup all natural peanut butter
In medium sized saucepan combine coconut oil, agave, and vanilla extract.
Melt together over medium heat. (You can skip this step by melting the coconut oil, ahead of time, in the microwave for about a minute).
Mix in the oats and flax and cook, stirring constantly, on medium heat for about 2-3 minutes.
Remove from heat.
Line a 9×6-inch pan (1.5 Q) with parchment paper, leaving enough, on the sides, to lift it out of the pan when it hardens.
Press 2/3 of the oat mixture in the bottom of the prepared pan, reserving 1/3 for the topping.
Melt chocolate and peanut butter together over low heat, until melted.
Spread evenly over oatmeal crust, leaving about 1 cup to drizzle on top at the end.
Add remaining oatmeal mixture over the top of the chocolate mixture.
Drizzle with remaining chocolate mixture.
Place in the fridge for a couple hours, or until firm. (Placing it in freezer for about an hour works just as good and much faster)
Store, in sealed container, in the refrigerator.
