In this video I’m going to show you how to make healthy vegan and glutenfree cupcakes with a lovely thick and creamy chocolate ganache.

Chocolate Cupcakes with Creamy Ganache

Ingredients Cupcakes:

1 cup buckwheat flour
2 tsp baking powder
1 tsp locust bean gum
4 tbsp birch sugar (Xylit)
5 tbsp cacao powder, unsweetened
4 tbsp agave sirup (or maple/rice sirup)
5 tbsp melted virgin coconut oil
1,5 cup almond milk
1 dash of apple cider vinegar
2 tbsp chocolate chips
Vanilla extract and pink Himalayan Salt to flavour

Ingredients peanut butter / chocolate ganache:

70 gr. Virgin coconut oil
30 gr. Cacao butter
½ cup cacao powder
3 tbsp pure peanut butter
3 tbsp agave sirup
Vanilla extract and pink Himalayan Salt to flavour

+ separately: 1 cup pitted dates, soaked for 1 hour
