how to make Nutella Hot Chocolate Brownie Cupcakes
Fudge brownie cupcakes with a swirl of Nutella frosting is what dessert’s all about.
75g plain flour
300g castor sugar
4 tbsp Nutella for batter
1 cup nutella for filling
1 cup mini marshmallows
1 cup toasted Hazelnuts
Choc Sauce (recipe: www.thescranline.com)
1 batch Fluffy Chocolate Ganache Frosting
5 tbsp Nutella
LET’S GET COOKING…
Preheat a fan forced oven to 160C (320F).
Add butter and chocolate to a microwave safe bowl. Microwave for 20 seconds at a time and repeat until it becomes smooth.
Add flour, eggs, sugar to a large mixing bowl and mix on low speed using the paddle attachment or a wooden spoon until everything is combined.
Slowly add chocolate and butter mixture while mixing on low speed. I know I added things in a different order in the video but it honestly makes no difference with this batter, it’s very forgiving. As long as the eggs don’t end up in the microwave haha.
Scoop Batter into Cupcake tin, lined with cupcake liners and fill almost to the top. Bake for 40 min. Once baked, transfer straight to a cooling wrack to cool.
To prepare the frosting, add nutella to choc ganache frosting and mix until well combined.
To assemble cupcakes, core each one and fill with Nutella. Fit the end of a piping bag with a large round tip and frosting cupcakes in a donut swirl. Drizzle with chocolate sauce and sprinkle with mini marshmallows and toasted hazelnuts.
