This year breathe some new life into your holiday dessert table with this fantastic vegan pumpkin pie recipe from Candice.

The first element of this pie we need to make is of course the crust. To create the crust, yes you will be making it from scratch, add salt and flour to your mixing bowl and combine it well. Add 6 tbsp of vegan butter to this, start with 3 and then add in the other 3 as you are mixing. Once your mixture is turning into crumbs you can start adding in ice cold water 1 tbsp at a time. Once you reach a consistency similar to what you see in the video take your mixing bowl out and start kneading your crust dough. Work it into a disk shape and then wrap it in saran wrap and put it into the fridge for a minimum of 30 minutes, but as long as overnight.

While you wait for your dough go ahead and make your filling. Itis worth noting here that you want to use pumpkin puree specifically not pumpkin filling as we will be adding sugar and pumpkin pie filling is already sweet enough. Once you have you pumpkin puree pour it into your mixing bowl. Add to that coconut sugar, almond milk, pumpkin spice, maple syrup, corn starch, salt, and finally coconut oil. After adding all that in you will mix it well.

When you are sure your dough has been in the fridge for at least 30 minutes pull it out and unwrap it, then transfer it to a piece of parchment paper. Put an additional piece of parchment paper on top and then roll it out flat. Peel off the top layer of parchment paper then put your pie pan down face first on the bottom layer and flip the whole thing over. Now just press your pie crust down into shape inside the pie pan. After that peel off your parchment paper and cut off the excess crust. For a little extra flair use a fork to create the classic pattern in the crust as seen in the video.

Pour in your pie filling, be sure not to overfill your crust. Put your pie in the oven for 60 to 65 minutes. When your timer goes off pull out your perfect looking vegan pumpkin pie. You will be tempted to eat it right then and there, do not. It is going to be extremely hot. Instead you are going to put it into the fridge to cool, and also solidify, for 4-6 hours. After the cooling period take it out and enjoy. Vegans unite! Pumpkin Pie never looked so good.
