Chef Mama T’s secret? Her chili was actually…vegan.
Yes, you read that right. Absolutely No Meat in her chili. The proud winner of the Honolulu chili cook-off kept the judges guessing until the votes were in. All notions that anything vegan tastes like sandpaper or that vegan main dishes can’t compete with meat and dairy are just wrong!
Thanks to Mama T’s win, vegan food can match and even win over the staunchest carnivore. Although, she isn’t ready to reveal the complete recipe, Mama T did hint that she used a few vegan meat alternatives and the most unusual ingredient…a roasted eggplant. (Recipe link here and at bottom of this page..) In an interview with Vibrant Wellness Journal, she said, “The eggplant added a sweet, creamy consistency that was indescribable.”
We totally agree. That does sound indescribably mouth watering, Mama T!

Vegan Chef wins Chili Cook-Off in Honolulu!
Mama T didn’t tell the tasters at the market (over 600 people) that her recipe was vegan, and her awesome recipe beat out two pretty famous local chefs and their meat-based recipes at the event!
The recipe is a secret (for now!) but she has shared a few of her winning ingredients with us. She started with a mixture of chilies, tomatoes, onions, green peppers and added a selection of meat alternatives: Field Roast Mexican Chipotle Sausage, Tofurkey’s Smokey Maple Bacon Tempeh (both favorites around our house too), Sweet Earth bacon, and veggie beef crumbles. But her favorite new chili ingredient is pureed, roasted eggplant. She says, “The eggplant added a sweet, creamy consistency that was indescribable.” When the judges asked her to share the ingredients with the crowd, she told them her secret was that there was no meat in the chili!
