Coconut Rice Pudding Recipe by Jenny Kelley (aka @iloveflavor)

1 cup medium rice (uncooked), rinsed and strained
Soak rice in 3 cans (5 cups) coconut milk for 2 to 2 1/2 hours – lid on and in the fridge.

2 tablespoons fresh ginger (peeled, grated, finely chopped)
6 cinnamon sticks
1 teaspoon salt
Add ginger, cinnamon, and salt to coconut milk and rice. Stir.

Cook on low heat (medium heat until boils, then low or medium low – at a small simmer) for 30 minutes. Try to stir only once (after 15 minutes) or not at all.
After 30 minutes, add…
1 cup sugar
another cup (or can) of coconut milk
1/2 to 1 cup raisins
Stir and cook for another 40 minutes, stirring ONLY from bottom to top (not in a circle) every 10 minutes – just so rice on the bottom doesn’t stick and burn.
When the rice pudding has thickened after 40 minutes, pour into a serving container or cups.
Enjoy warm or refrigerate and serve chilled.
Garnish with a sprinkle of ground cinnamon and/or cinnamon sticks.
