Apple Galette – A Beautiful Concentric Dessert

Do you love pie? Or pi? If you love both, then this apple galette recipe is perfect for you.

The original recipe is from Bon Appetit, and Bon Appetit based it on a pear galette that was served at Chez Panisse. So I thank Alice Waters for being the orginal mastermind of my favorite dessert, ever.



8 1/2 ounces AP flour
1 or 2 tablespoons of sugar (depends on your sweet tooth)
pinch of salt
3/4 cups (1 1/2 sticks) very cold unsalted butter, cut into 1/2 inch cubes
4 tablespoons (or more) ice water

(Fruit Topping)

2 Granny Smith apples, peeled, cored, and cut into 1/8-inch-thick slices
zest of 1 lemon
4 tablespoons sugar, divided into 2 and 2
1/4 cup apricot preserves
splash of milk
