Dessert is my favorite so I wanted to share my go-to quick recipes. Hope this gives you some ideas when you’re in the mood for something sweet. 😉

ALMOND BUTTER STUFFED DATES:
nut butter of choice
sprinkle with raw cacao powder
COCONUT LEMON ROUNDS:
2 cups oatmeal
350 grams dates
splash of vanilla extract
zest of 1 lemon
1/2 a lemon juice
shredded coconut (topping)
Blend oatmeal in food processor first.
Add remaining ingredients except coconut.
Blend until a dough forms (should easily stick together)
Roll in shredded coconut. Refrigerate for 1 hour.

CHOCOLATE PECAN PEANUT BUTTER “NICECREAM:”
Peanut butter drizzle:
1 tbsp powdered peanut butter
sprinkle of water and mix until desired consistency
(you can also add a bit of sea salt if desired)
High speed blender
3 frozen bananas
Splash of almond milk
Splash of vanilla extract
t tbsp raw caco
pecan pieces + shredded coconut for topping
Blend until ice-cream consistency.
Top with peanut butter drizzle, pecans, shredded coconut and a dash of sea salt. YUM!
* You can also make a big batch and store in the freezer. 🙂
